A tasty sofrito of olives with tomato and a lively, crunchy touch of fried capers. It's finger-licking good!

Today’s recipe once again features essential ingredients from Mediterranean cuisine. We suggest combining the tuna with a delicate stir-fry of celery, olives and plum tomatoes. This sofrito is already delicious, but if you like them, just wait until you try it with capers; the combination of flavours is out of this world!

If you want to get the most out of capers, our chef suggests frying them beforehand, so that they open up like flowers and maintain a lively, crunchy texture.

Prepare a couple of Koldfin Frozen Marinated Yellowfin Tuna Loins and get ready to cook.

Ingredients ( 4 pax)

  • 2 packs of Koldfin Frozen Marinated Yellowfin Tuna Loin.
  • 11 onion
  • 12 cloves of garlic
  • 180 g celery
  • 14 plum tomatoes
  • 180 g black olives (with stone)
  • 120/30 g capers
  • 1Extra Virgin Olive Oil
  • 1Salt
  • 1Pepper to taste
  • Dificultad Low

Paso a paso 1/6

Chop the onion and fry it in a frying pan for 7 minutes over a medium heat.

Paso a paso 2/6

Chop the garlic and celery into very small pieces and add to the pan after 7 minutes and leave to cook for a further 5 minutes.

Paso a paso 3/6

Cut the tomatoes down the middle and then cut each half into 8 pieces. Add them to the frying pan and leave to cook for a further 7 minutes.

Add the black olives, salt and pepper to taste and reduce the heat to low for a further 8 minutes.

Heat another frying pan and add a finger of olive oil. When the oil is hot, carefully add the capers. Remove them after 30 seconds. Set the capers and the sofrito aside.

Sear the tuna for about 45 seconds on each side and place it on a plate in slices of about half a centimetre.

Olives are very versatile in the kitchen and, although we use them mainly as snacks or in the form of olive oil, their properties and flavour are more than enough reason for them to gain a more relevant place in our diet. Our suggestion today is to combine them with tuna and a delicious plum tomato sofrito, but the possibilities are endless, and if you combine them with more recipes you will see that they will add an original touch to all of them.
