Marmitako is a stew whose main ingredients are tuna and potatoes, served with vegetables such as onions and peppers.

This dish is perfect for this season, when the temperatures are dropping. Remember to serve it hot with a spoon! You can also serve it in a small clay pot, as they do in some regions of the Basque country.

Ingredients ( 4 pax)

  • 2 packs of Frozen Marinated Yellowfin Tuna Pokes
  • 1 onion
  • ½ red pepper
  • ½ green pepper
  • 1 clove of garlic
  • 1 bay leaf
  • 4 tomatoes
  • 500 ml stock
  • 1 tsp. “ñora” or chilli paste
  • 1 tsp. spicy paprika
  • 2 potatoes
  • Extra virgin olive oil
  • Parsley
  • 400 ml water
  • Dificultad Low

Step by step 1/4

Cut the vegetables and fry them in a preheated pot with olive oil. Start with the onion and garlic.

Next, add the peppers and sauté until golden. Add the “ñora” and stir until mixed in with the vegetables. Add the tomatoes to the sauce and sauté until the water in the tomatoes evaporates.

Once the sauce is ready, add the stock and water. Next, add the peeled and cut potatoes. The bigger the chunks, the longer they will take to cook. Let boil for approximately 15 minutes.

After 15 minutes, add the diced tuna and cover the pot. Let stand for 2 minutes, then serve!
