Baked Aubergine with Garlic and Thyme

Tuna is the perfect fish for daily cooking. It's healthy, easy to cook and versatile. It’s a great fit for a large number of recipes. For today's recipe, we’ve got a dish with aubergine and tuna, a very Mediterranean choice: healthy, light and simple.

Today, we’re cooking a very summery dish, a delicious fusion that shows us how well tuna combines with most garden vegetables.

This time, we’re going to use aubergines, a vegetable rich in fibre and low in fat. Although the origins of this vegetable go back to Asia, aubergines have been a part of Mediterranean gastronomy for millennia (just like tuna).

We’ll prepare the tuna and the aubergines in a simple, traditional manner: We’ll sear the tuna for about 30 seconds over high heat in a pan, leaving it raw and tender on the inside and well-marked on the outside, the best way to enjoy Frozen Marinated Yellowfin Tuna Slice

We’ll cook the aubergines in the oven, with just extra virgin olive oil and a little thyme and garlic for a little flavour.

Ingredients ( 4 pax)

  • 2 packs of Frozen Marinated Yellowfin Tuna Slice
  • 2 aubergines
  • 2 cloves garlic
  • 10 g thyme
  • Extra virgin olive oil
  • Pepper to taste
  • Salt
  • Dificultad Low

Step by step 1/6

Cut the aubergines in half and cut them cross-ways so that they cook properly and absorb the dressing. Set them aside.

Chop the garlic and separate the thyme leaves to chop them. Next, pour oil into a bowl and mix with the chopped garlic and thyme. When the dressing is done, pour over the aubergines . Salt and pepper to taste.

Take an oven tray and spread a little olive oil before placing the aubergines.

Pre-heat the oven and put in the aubergines for 35-45 minutes at 180º C. A little trick is to prick the aubergines with a toothpick to see if they're ready. Keep them in the oven if they're not well done

Heat a pan with a little olive oil over high heat. Sear the tuna for 30 seconds on each side

Plate together with the aubergines. Enjoy!
